Our Story
Our story begins in 1922 with the construction of the Wellington grain elevator. If our walls could talk, they would share tales of the countless farmers and community members who have passed through, connecting people to the land and each other. Today, we honor this legacy by transforming this historic structure into a vibrant gathering place and taproom that continues to support local agriculture and Northern Colorado businesses.
Our hardworking team has passionately infused The Well with charm and intention, offering quality, allergy-friendly food and beverages that reflect our commitment to excellence and inclusivity. We believe that everyone should be able to enjoy rich flavors and a warm atmosphere. In collaboration with our sister business, Grouse Malt House, we craft unique gluten-free microbrews that cater to all. Grouse Malt House is an industry leader in producing gluten-free craft malt and a supporter of local agriculture, including organic, dry-land farming. Our dedication to supporting local is evident in every sip and bite, as we partner with Colorado farms and businesses to bring you the best our region has to offer.
Our Taproom
We welcome all ages, backgrounds, and experiences to enjoy our space. Come wet your whistle with a craft beer from one of Grouse’s partner breweries, or choose from a curated collection of fine wines and local spirits. We also offer a slew of non-alcoholic options for adults and kids.
